Strange Organ

I'm with two musicians working on an arrangement or composition. They look like the Italian version of For King and Country (lol). They're both at the keyboard. The lowest octave or so on the left is organ-powered, the middle next section is a more traditional keyboard, and the biggest section on the right has to be played with a long xylophone mallet. (I don't remember what it sounds like, just what it looked like playing it, though it must've been unique.) I'm looking at a sushi menu and each has a picture. One kind on the top row is a sushi wrapped completely in kelp instead of nori.
